Café Owner of The Cold Pressery
Tell us a bit about
yourself and your passions.
My passions are in advertising and marketing. My boyfriend and I started this place when we started altering our diets because he had Crohn’s disease. We would go to a lot of healthy food places in
Toronto, Cali and Vancouver, and there we were inspired. We wanted to serve
something that we were proud of. The Cold Pressery was actually just a juice
bar and then it went on to becoming this whole lively café.
Are you a vegan?
I'm actually not, it is a little weird that my boyfriend and I aren’t, but I became a vegetarian this year.
Our summative project was to create a business plan and it was based on a juice bar, the name was different but the concept was pretty
much the same. It did really well. So, I took it to Futurepreneur -they helped fund our business and connected us with a mentor in the industry. It was
difficult to get a place because we didn’t have prior experience and it's harder when you don’t have a business history. We tried getting into the
condos by Square One and they didn’t let us. But, the owner of this property gave us a chance.
Did you face any other challenges or obstacles?
I think our number one issue was that veganism is a big thing and some people think it’s just a trend. There are so many people who are still not open to it. It took me by surprise how uneasy people were when they came into the facility. When we first opened we figured everybody is going to be going downtown for a place like this, so that if we open here they’d be happy we’re in Mississauga - but they didn’t know we were here! So, our target market wasn’t coming to us and we were getting people who weren’t looking for a vegan café and came here for convenience. A lot of people were coming from all the businesses around here and they thought we were just like any other café. And, for the first 3 months, for every 10 people who came in about 3 or 4 would leave because we didn't have dairy milk for the coffee, and we told them to try almond milk. We also didn’t have any meats so many were asking; “What am I supposed to eat?”
It’s great that you stayed true to the values of The Cold Pressery, where do you see today’s society's eating habits heading towards?
I think it's a very positive movement right now. When we first opened, we expected customers in their 20s or 30s to come in, because it’s unfortunate that many plant based foods cost more than animal products these days, but I’m surprised at the amount of customers who come here and are actually in their teens. They are very responsible about what they eat.

Yes, well the wall with the city line took 3 and a half
weeks and we redid the menu 3 times. We went over it until we settled on a
design. I think all the art in this place took us, collectively, a little
over six weeks.
How did you come up
with the name?
It was actually called the Cold Pressed Café when we
started, and we worked on the name the whole time we were building this and
finally The Cold Pressery came to us and it sounded so much better.
What’s your favorite
item on the menu?
The Acai bowl, it’s delicious! The chia seed pudding is
really good too.
And so our adventure begins...

Cold Pressed juices contain more vitamins, minerals, antioxidants and enzymes than juices created using a traditional centrifugal machine. They are produced by using pressure to extract the maximum amount of nectar from fresh fruits and vegetables, leaving behind a raw and fresh juice. ~ The Cold Pressery
We shared the TLT and the Rawtella for a dessert. If you're wondering about protein options, there are many complete protein options: hemp seeds, spirulina, chia seeds, flax seeds, organic tofu, and more. Beans - considered as an incomplete protein until paired with grains - is also a yummy option offered in the "Chipotle Bean Taco".
Our favourite is tea - always the best choice to make you feel like you're at home.
And if you're trying to cut out stimulants; like caffeine and unnatural sugars, there is a lot of variety of herbal teas - which do not contain caffeine.
Plus desserts on the menu are mostly, if not all, made from natural sugars.
This one is Acai Berry tea from the Cold Pressery's "Blooming Flower Teas".
A relaxing atmosphere and where all the yummy ingredients reside.
What's great about The Cold Pressery is that you can also customize your cold pressed juice!
The ingredients you can choose from are: Kale, Spinach, Cucumber, Celery, Carrot, Parsley, Beet, Green Apple, Red Apple, Orange, Pineapple, Ginger and Lemon.
If you're feeling down, don't forget about The Cold Pressery's wellness shots; Spirulina, Turmeric, Apple-Lemon-Ginger and Matcha shots. They will comfort you with nature's healing magic.
Did we mention vegan pies? Ah, the thought of PUMPKIN PIE requires another visit.
Tea and light, the utmost calmness for a re-charge.

I love this idea of vegan coffee! I love drinking almond milk with coffee, I think it is a great substitute for dairy milk. Great business idea....and lovely interview!
